Candied yams!




Ingredients :

10-12 lbs of peeled/cut sweet potatoes 
4 cups of white sugar
2 cups of brown sugar
2 1/2 sticks of real butter
2 tablespoons good Vanilla extract
3 Cinnamon sticks (or 3 tablespoons ground Cinnamon) 
2 1/2 tablespoons Nutmeg
3 slices of lemon 
1/2 cup of honey 
1 teaspoon salt 
1/4 teaspoon black pepper 

*These ingredients are for a large roasting pan size that can serve from 25-30 people

Directions here :

Layer potatoes in a large disposable roasting pan, cover with sugars, cut butter into 1 inch pieces and place on top, add vanilla, connamon, nutmeg, salt, pepper and honey. Add a few slices of lemon.....I used 3 thick slices. 
Tightly cover the potatoes with heavy foil and place in a preheated 375° oven for 1 hour and 20 minutes (Stir lightly, spooning the glaze over the potatoes about halfway through the cooking process) until potatoes are tender and the sugar thickens to a glaze. 

Feel free to add or decrease the amount of sugar to your liking but keep in mind that if you want a thicker glaze as opposed to watery liquid in your yams you NEED this much. I know it's a lot of sugar but it will make the difference in whether your potatoes cook down to "candied yams" or simply cooked sweet potatoes
